chocolate chip cookies

      Crisp Chocolate Chip Cookies
2 1/4 c.    all purpose flour
1 tsp.       salt
1 tsp.       baking soda + 1 pinch more
1              egg
2 oz.         milk
1 1/2 tsp.  vanilla
1 c.           unsalted butter
1 c.           sugar
1/2c.         brown sugar
2c.            semi-sweet chocolate chips
       Puffy Chocolate Chip Cookies
2 1/4 c.     cake flour
1 tsp.        salt
1 1/2 tsp.  baking powder
2 eggs
1 1/2 tsp. vanilla
3/4 c.       sugar
1 c.          brown sugar
1 c.          butter flavored shortening
2 c.          semi-sweet chocolate chips
 

 


 
 
        Chewy Chocolate Chip Cookies
2 1/4 c.       bread flour
1 tsp.          salt
1 tsp.          baking soda
1 1/2 tsp.    vanilla
1/4 c.          sugar
1 1/4 c.       brown sugar
1 c.             unsalted butter
1                 egg
1                 egg yolk
2 Tbsp.       milk
2 c.             semi-sweet chocolate chips

For all recipes:
Mix dry ingredients.  Set aside.  Cream butter and sugars.  Add eggs, then vanilla and milk.  Beat until creamy and fluffy.  Add dry ingredients a little at a time.  Mix well, but don't over mix.
Add semi sweet chocolate chips.  Stir in until thoroughly mixed.

Chill dough for chewy cookies, otherwise go on to the next step.

Drop cookies onto sprayed cookie sheet or one covered with parchment paper.  Bake in a preheated 375o oven.  Bake 10-15 minutes.  Begin checking progress after 5 minutes.
